The Path
Luke Feltz trained at Gettysburg College before entering the kitchen through Boundary Road in Washington, D.C, where the work began in 2012 as a salad station cook. From there, he moved through lead line cook and then sous chef, staying until 2015 and learning the base requirements of a professional line: timing, discipline, and the ability to keep service moving without losing control of the pass. The move sharpened the pace and finish of his cooking, and it marked a more explicit responsibility for how a kitchen holds itself together under service. In 2016, he joined minibar in Washington, D.C. During that period, he also staged at Amass Restaurant in Copenhagen, and that broader exposure sat alongside—not instead of—the same disciplined approach. Today, he is Executive Chef of Smyth and The Loyalist, applying those earlier years to a kitchen identity built on control, consistency, and clear intent.
The Work Today
The Loyalist is the primary post, and Luke Feltz’s work there is tied to neighborhood comfort food and to an operating style guests already recognize. The point is not reinvention for its own sake, but tightening the existing frame: keeping the kitchen aligned with the flavors and standards that built trust in the first place. “My vision is primarily to continue making the locally and sustainably sourced comfort food that the neighborhood has grown to know and love.” In trade terms, the line reads as a statement of continuity.
