For the New York cocktail trade, speed, structure, and platform-building are part of the same practice. Lynnette Marrero’s work sits in that lane: service bars, brand education, beverage direction, and Speed Rack, the competition she co-founded to showcase female bartenders while raising funds for breast cancer research. “Community is so important, especially during crisis moments.” Lynnette has said.
The Ascent
Cocktail training in New York often moves through high-volume rooms before it moves into authorship. After Columbia University, Lynnette Marrero worked at Flatiron Lounge, a venue tied to the city’s cocktail renaissance, where the requirements were practical: balance, pacing, station discipline, and hospitality under pressure. Senior bar work at Freemans NYC extended that trade register, and Elettaria followed in 2008. Those rooms placed Marrero in the working grammar of New York bartending before ambassador roles widened the brief: Rum Ambassador at Diageo and trade and Mixology Ambassador at Zacapa Rum put product knowledge, education, and service-language into a larger industry context. Beverage work outside the nightly bar station became part of the practice through Drinksat6, which Marrero founded, and through roles including Beverage Director at Rye House and National Brand Mixologist for Perrier Sparkling Natural Mineral Water. The common thread is beverage development built for both the guest and the trade audience. Competition can function as infrastructure when it gives working bartenders visibility, standards, and a reason to sharpen under time. Speed Rack, co-founded by Marrero in 2011, is built on that model: female bartenders compete in a format that foregrounds speed and accuracy while raising funds for breast cancer research. Her current bar work includes Bar Director roles at Llama Inn and Llama San, alongside service to the Restaurant Workers’ Community Foundation (RWCF) as a Board Member. Prepared beverage and non-alcoholic development extend the same formulation discipline into different channels. Marrero’s roles as partner and Chief Mixologist of Delola and Liquid Creative Director of Aplós place cocktail technique inside branded liquid development, where consistency, audience, and format matter as much as the individual serve.
Present Day
The current practice spans competition, bar direction, advocacy, and product development. Lynnette Marrero continues as Co-Founder of Speed Rack, Partner and Chief Mixologist at Delola, and Liquid Creative Director at Aplós, with work that keeps service technique connected to broader beverage systems.
