Maiko Tsuji (辻麻衣子)

Maiko Tsuji (辻麻衣子) is the toji, or head brewmaster, at Tsuji Honten/Gozenshu in Katsuyama, Maniwa City, Okayama Prefecture, Japan, where she has led brewing since 2007 after joining the brewery in 2000. She is okayama’s first female master brewer and a seventh-generation family member, and she has helped steer the brewery’s focus toward Omachi rice and bodaimoto-style sake. Her public profile also notes awards including consecutive Hiroshima Regional Tax Bureau sake appraisal honors for junmai sake in the years after her appointment.
