White corn, lime, and morita chile set the pace at Bellota in Denver, where Manuel Barella builds flavor with discipline, not decoration. The cooking is grounded in Mexican technique and in the push-pull of smoke and acid, dairy and herbs, heat and freshness. Esquites, chile relleno, Enchiladas de pollo, and Rainbow Trout Gravlax sit in that register: not as nostalgia pieces, but as dishes with a clear working vocabulary. Tortillas, cotija, and salsa ranchero carry the structure; requesón, epazote, and morita chile tighten the finish.
Coming Up
Training at Instituto Culinario de Monterrey set the base, then a series of kitchen posts widened the range. Manuel Barella worked catering services at Gold Strike Casino Resort in Tunica, Mississippi, before moving to Chef de partie at St. Regis Hotel in Atlanta, Georgia. He then cooked at Calistoga Ranch in Napa Valley and worked as sous chef at Cindy's Backstreet Kitchen. The path continued west to Colorado, where he served as pasta cook at Frasca Food and Wine in Boulder, Colorado, and later as sous chef at Uchi Denver, Colorado. Each step added another tempo to the work: large-scale service, restaurant precision, and the kind of repetition that sharpens technique. Today, Manuel is Executive Chef of Bellota and head of Hispanic Chef Association of Colorado.

At Bellota in Denver, Manuel works Mexican cuisine with an eye for texture, contrast, and clarity. The plates are layered, but not crowded; each element has a job. Esquites bring white corn, crema, lime, charred tortilla aïoli, cotija, morita chile powder, and serrano into a sequence that moves from richness to brightness to smoke and heat. Rainbow Trout Gravlax lands with telera bread, everything spice butter, requesón, fried capers, red onion, lime zest, and epazote powder, balancing delicacy against salt, softness against crunch. Enchiladas de pollo show the same discipline: chicken confit, raw onion, Chihuahua cheese, tortillas, mole negro, cotija, pickled onion, and sesame build depth without losing lift. Chile relleno is handled with similar control, bringing poblano pepper, Chihuahua cheese, epazote, salsa ranchero, cotija, pickled onion, and cilantro into a form that stays familiar while reading cleanly on the plate. The food holds to tradition, but it does not sit still. That sense of motion also comes through in how Barella talks about the work. On Riot BBQ, he said, "bbq came to life and it's been one of the best years of my professional life." The line tracks with a cook still engaged by the exchange between technique, place, and fire.
