Manuel Ulrich

Manuel Ulrich is the chef of Ösch Noir at Der Öschberghof in Donaueschingen, Germany, where the restaurant’s official site says he and his team create modern French cuisine and identifies him as the chef there. Multiple sources state that he completed his culinary training at the Öschberghof, later worked at Haerlin in Hamburg and Schwarzwaldstube in Baiersbronn, and returned to the Öschberghof to lead Ösch Noir when it opened in late 2018. Under his leadership, Ösch Noir earned its first Michelin star in 2020 and a second in 2021.
