Today

The work at Domaine Canet-Valette in Cessenon Sur Orb is built on a set of cellar choices that Valette has made his own since founding the estate in 1992. Later harvesting, extended cuvaison, and repeated pigeage push the wines toward maximum flavor, extraction, concentration, and tannin. Those decisions are carried through to bottling. Valette bottles his wines unfiltered and unfined, keeping the finished wine aligned with the cellar work rather than softening it before release. There is another side to the same practice: less-ripe grapes and gentler extractions are also part of his stated specialty, aimed at balanced, elegant wines with finesse and complexity. The tension is clear in the style—structure without bluntness, concentration without flattening the fruit.

Recognition

Organic certification marked the estate’s public path in 1999, when Domaine Canet-Valette was certified organic by Ecocert. In 2002, it was certified Bio by AB / Eurofeuille, adding a second formal reference point for the farming and cellar standards Valette had set. By 2026, Guide Vert had awarded Domaine Canet-Valette two stars.
