Behind the bar in Vienna in 2005, Marcus Philipp started with the fundamentals that shape any serious service program: pace, control, and the ability to stay useful under pressure. The work moved him through some of the city’s more distinct drinking rooms, each one adding another layer to a practice built on timing and room-read as much as on the pour itself. By the time Marcus Philipp became bar-chef at Albertina Passage in Wien in 2011, the role had shifted from execution to direction. From there, the progression continued through bar-chef work at Sky Bar im Kaufhaus Steffl in Wien, where the demands of precision and guest awareness remained central. Since 2019, Marcus Philipp has been barchef of Aurora im Andaz Vienna Am Belvedere in Wien, a position that reflects years of steady advancement rather than sudden change. The through-line is control: measured service, clear intent, and attention to the full experience around the drink.

Where They Are Now

At Aurora in Vienna, the brief is not only to pour, but to build a distinct atmosphere and carry guests into a Scandinavian setting. That kind of bar work asks for more than technical consistency; it asks for spatial awareness, restraint, and the ability to shape service around the guest in front of you. Marcus Philipp frames that plainly: “I can make the best drink in the world, but if the guest wants to be left alone, that doesn't help me at all.” Reading the guest sits at the center of that approach. “Above all spirits and liqueurs, I first and foremost must be able to read the guest,” Marcus Philipp has said, and that priority defines the style at Aurora: attentive without being intrusive, composed without becoming static. The aim is a bar that feels deliberate from first contact to last detail.
