i. Biography
She learned early that service begins at home: evenings and weekends helping her mother cook gave Maria Hines an early view of the kitchen as labor, repetition, and pleasure in the same room. That first restaurant job left a mark for the same reason. Peeling carrots, she saw the work plainly and, by her own account, could not believe someone would pay her to do it. It is a small anecdote, but it points to a temperament suited to the line: attentive, practical, and alert to the basic tasks that hold a kitchen together. “I remember peeling carrots at my first restaurant job, and thinking, 'I can't believe someone would pay me to peel carrots. It's so fun.'” Maria has said.
Coming Up
Training at Mesa College gave Maria Hines a formal base before she moved into the executive chef role at Earth & Ocean at the W Hotel in Seattle. From there, she built her reputation in a series of kitchens that demanded consistency as much as ambition. At Tilth in Wallingford, Seattle (2006–2020), where she served as chef/owner, her work became closely tied to an ingredient-driven style marked by restraint, precision, and control. The chef/owner years at Golden Beetle (2011–2016) and Agrodolce (2012–2019) added range without changing the underlying discipline. Across those rooms, the work was less about scale than about sustaining standards: menu decisions, service pressure, and the long view required to keep a kitchen sharp over time.

Maria Hines Consulting extends that same practical mode into chef, food and beverage consulting, and Content Development. The work translates kitchen experience into broader food conversations without losing contact with the realities of how menus are built and communicated.
