i. Biography
Slovak bar practice entered Marian Beke’s working life early: at 18, he was behind the bar as a cocktail bartender in his hometown in Slovakia. The later pattern moved through head-bartender work, founding roles and ownership, with the bar treated as a system of theatre, discipline and detail rather than a counter for mixed drinks.
The Climb
Formal hospitality training gave the early bar work a working frame: Marian Beke studied Hospitality in Bratislava and at Private hotel and cooking school. In bar terms, that grounding sits before the garnish and the unfamiliar ingredient: mise en place, sequence, temperature, service and timing. The useful combination is precision with personality — a measured hand, then a gesture that the guest can read. A founder role at The Gibson in Old Street, London, from 2015 to 2023 placed Marian Beke inside the full grammar of a bar: drinks, room, menu, pacing and the way curiosity is converted into a served glass. The Gibson became the clearest marker of his London work. The cocktail, in that context, was handled less as a fixed formula than as a complete service object. Today, Marian is founder of The Gibson.
Today
The current address includes Berlin. As founder of The Gibson in Berlin, Germany, Marian Beke carries the name into another city and another phase. The continuity is not simple repetition: bar identity, drink construction and guest handling have to be translated into a different urban rhythm. Ownership at The Gibson Bar and a new venture in Berlin with the BellBoy Group keep the work in the same trade lane: bars, drinks and the small decisions that determine the guest’s experience. In this practice, the chill of the glass, the lift of aroma, texture, garnish and arrival are not decoration. They are part of the build.
Signature
The named cocktail work includes THE HUMMINGBIRD, BBC (by Marian Beke), The Gibson Vintage Cocktails Collection, Amarotto, and Wild Berries and Balsamic Vinegar of Modena. The range sits across bright, nostalgic, playful and structured registers. In Marian Beke’s hands, the cocktail can lean savoury, unexpected and sensory, with flavour treated as layered rather than simply mixed.
In Their Words “We tried to use a lot of ingredients that people may not know, like different spices or purple carrot juice, to create an experience. We want people to feel like they couldn’t have made the drink themselves at home.” “Process is everything in Japanese bartending. ”
Recognition
Marian Beke has received World’s 50 Best Bars, no.6 for The Gibson. The stated specialisms — experimentation with savoury drinks, neuromixology and gastrophysics — place the work in the area where flavour, perception, texture and method meet. For Marian Beke, the drink is shaped before it reaches the guest: ingredient choice, temperature, garnish, aroma and serve all carry part of the result. “Process is everything in Japanese bartending. ” “We then looked at the recipe and how the garnish is an extension of the cocktail – not just a decoration but to add flavour.” “We tried to use a lot of ingredients that people may not know, like different spices or purple carrot juice, to create an experience. We want people to feel like they couldn’t have made the drink themselves at home.”
