The Climb
Training at Kendall College gave Mark Andelbradt the base that later held up under the pace of high-output kitchens. The early part of his career moved through rooms where consistency, timing, and discipline are the working language: Brasserie T in Chicago, Tru in Chicago, Daniel in New York, Morimoto in Philadelphia, Morimoto in New York, and Tao in The Venetian, Las Vegas. Each kitchen added another layer of repetition, scale, and control to a résumé built in places where the standard is visible on every plate. Leadership came into focus in Las Vegas, where Mark Andelbradt became executive chef at Postrio in Grand Canal Shoppes, Las Vegas, Nevada (2014), then executive chef at Wolfgang Puck Bar & Grill in Downtown Summerlin, Las Vegas, Nevada (from 2014). Those posts shifted the work from running a station to directing the rhythm of a kitchen, where consistency, timing, and tone are managed across the room.
