Mark Klebeck founded Top Pot Doughnuts & Coffee in Seattle by reading a gap in the market with both a baker’s instinct and an entrepreneur’s eye. In 2002, he co-founded Top Pot Doughnuts and set hand-forged doughnuts at the center of the business, giving a familiar pastry a more deliberate form, cleaner finish, and clearer sense of place.
The Essentials Top Pot Doughnuts & Coffee was built on a reframed standard: doughnuts lifted off a stereotypical mom-and-pop platform and placed on something more considered. In Klebeck’s account, that meant recipes built with the best ingredients and precise techniques, aimed at a higher-quality doughnut rather than novelty. The work was about changing the level of expectation without abandoning the category itself, and about giving a common treat more detail and restraint.
