Fine-dining progression in Europe often moves through station discipline, then full kitchen accountability. Martin Klein trained at School of Hotel Management in Strasbourg before working as sous chef at Restaurant Wielandshöhe in Stuttgart (1996–1998), Chef de Cuisine at Restaurant Marstall (1998–2003), and Chef de Cuisine at Restaurant Ikarus in Salzburg (2003–2012). That sequence built technical control, menu execution, and brigade leadership before his move to the South Pacific as Executive Chef at Laucala Island Resort in Laucala, South Pacific (2011–2014). The working brief at Red Bull Hangar-7 depends on precision, adaptation, and continuity across changing menus. Martin has been Executive Chef there since 2014, with international reference points and disciplined execution continuing to shape the kitchen’s output.

The present post defines the current practice: Executive Chef at Restaurant Ikarus, a position held from 2014 to the present. In that system, Klein searches globally for the finest ingredients, new techniques, and fresh ideas, then applies them to the monthly guest chef menus in Salzburg. The format is built around invited culinary voices, making continuity a kitchen craft rather than a branding exercise. Red Bull Hangar-7 operates through incoming perspectives, while the resident team sets out its own signature work each August, serving distinctive culinary art informed by influences gathered from around the world throughout the year. That August menu has included dishes such as *Club Sandwich* and *Sot-l’y-laisse and red prawns*.
