Fine-dining progression in Europe often moves through station discipline, then full kitchen accountability. Martin Klein trained at School of Hotel Management in Strasbourg before working as sous chef at Restaurant Wielandshöhe in Stuttgart (1996–1998), Chef de Cuisine at Restaurant Marstall (1998–2003), and Chef de Cuisine at Restaurant Ikarus in Salzburg (2003–2012). That sequence built technical control, menu execution, and brigade leadership before his move to the South Pacific as Executive Chef at Laucala Island Resort in Laucala, South Pacific (2011–2014).
