Martin Wishart is a Scottish chef and restaurateur best known as the chef-proprietor of Restaurant Martin Wishart in Leith, Edinburgh, which opened in 1999. The restaurant earned a Michelin star in 2001 and has retained that accolade, establishing Wishart as one of Scotland’s leading fine-dining chefs. He later expanded the business with a restaurant at Cameron House on Loch Lomond and The Honours in Edinburgh.
