    The Path

    Formal kitchen formation began with Hotel Management School, giving Massimiliano Alajmo the base before he took on the chef role at Le Calandre in 1993. The appointment placed technique, menu authorship, and restaurant continuity in the same frame, with Le Calandre becoming the site where his cooking language was developed and judged internationally. Teaching and governance extend a craft vocabulary beyond service. Since 2013, Massimiliano Alajmo has served as a Board Member and professor at Master della Cucina Italiana, where professional knowledge is handled as transmission: method, judgment, and the discipline required to make Italian cuisine legible to the next generation.
