The first professional ground was Grand Hotel Trieste & Vittoria in Abano Terme, Italy (1990–1992), where he worked as steward, Pasta Cook, Chef de Partie. Relais le Jardin, Hotel Lord Byron in Rome, Italy (1992–1994), added the demands of Chef Tournant to that base.
