Technical formation matters in distilling, and Matt Hoffman’s came through the Institute of Brewing and Distilling and Heriot-Watt University. That background gave him the working vocabulary for the job: how water, grain, and yeast behave, and how small choices accumulate into a spirit with structure. He is now co-founder of Westland Distillery, where that training sits behind the business as much as the stills.

Where They Are Now

At Westland Distillery in Seattle, United States, Hoffman serves as master distiller, with the work centered on making whiskey that can carry a sense of place. The distillery’s focus on sustainability, considered agriculture, and a Pacific Northwest identity is part of the production brief, not an add-on. In that setting, raw materials are handled as flavor decisions, and the process stays tied to the agricultural and regional choices behind the spirit. Place, in this work, is built through the practical side of distilling: grain selection, fermentation decisions, and the patience required for those elements to register in the glass. Hoffman’s approach treats whiskey as a form of expression grounded in material constraints, where complexity comes from restraint and attention rather than embellishment. Garryana Whiskey is another expression of that same method. Hoffman’s own line about the work keeps the emphasis on process: “I’m pretty sure I started distilling before I ever actually had a whiskey!” It reads as shorthand for a career that has been shaped by doing the work first and letting the finished whiskey follow.
