    i. Biography

Maxime Grivel’s work sits where service becomes a technical practice: timing, sequencing, cellar knowledge, and room awareness. Across hospitality, consulting, and beverage leadership, his route has moved through Château de Bagnols, Institut Lyfe (Ex-Institut Paul Bocuse), Mère Brazier Epicerie Comptoir, and Alchemy Wines & Spirits Asia, with each post adding a different register to the same skill set.

    The Climb

Training at MADE iN Sainte-Marie Lyon, Lycee Professionnel Orsel, and Wine & Spirit Education Trust (2017) gave Grivel a structured base before service work pushed that knowledge into live conditions. At Hotel La Tour Rose (2009–2010), he served as Bar Manager, then moved into food and beverage as an assistant at TAJ Krishna Hotel (Hyderabad) in Hyderabad (2011–2013). Those roles sit close to the floor: pacing a service, reading the room, and handling the practical demands that keep hospitality moving. The brand side of beverage work followed. As Brand Ambassador at United Spirits Limited (2015–2017), Grivel worked in the space between product, presentation, and market language. In 2018–2018, he became Brand Advocate at Alchemy Wines & Spirits Asia, a role that kept him anchored to wines and spirits through positioning and communication. More recently, in 2023–2024, he worked as Sommelier Caviste at Mère Brazier Epicerie Comptoir, a position where product knowledge and daily service meet without separation. His current portfolio spans floor, bar, consulting, and brand work. Since 2018, Grivel has been Brand Expert of PWP Event Planning Design and Boutique; since 2019, consultant of Institut Lyfe (Ex-Institut Paul Bocuse); since 2023, director of bars of Château de Bagnols; and since 2024, Assistant Sommelier of Quintessence (restaurant). Taken together, those roles show a career built across execution and advising, with the bar as one axis and education as another.

    Today

Since 2023, Grivel has directed the bars at Château de Bagnols, where beverage service is part of the property’s identity rather than an add-on. He also continues as a consultant at Institut Lyfe, staying connected to the transfer of standards, technique, and professional vocabulary.
