The Climb
Training in France set the base for Michel Suas’s approach, followed by service as head pastry chef at Barrier in Tours, France. Those early posts established the habits that matter in pastry: structure, texture, finish, and the discipline to repeat them without drift. The move to b. Patisserie in San Francisco, California (from 2012), put that standard into daily production.
