In Madrid, Miguel Ángel Millán developed that service intelligence as a hospitality professional at Jockey, where composure, discretion and rhythm were part of the work. As director of beverage programme of EMi, Miguel’s work joins floor leadership with selection, keeping the programme responsive to the dining room rather than fixed on paper. Selection under pressure is a core sommelier skill. A bottle enters a meal in relation to cuisine, atmosphere, guest expectation and the tempo of the course. In Miguel’s practice, fluency rests on preparation: anticipating needs, holding alternatives, and keeping the list coherent while leaving enough movement for surprise. Wine service gains force when sensory balance has a reason to be at the table. The wine must taste right, but it must also make sense: sharpening a dish, softening a moment, extending a course or providing contrast when contrast is needed. In that frame, the beverage programme is not a catalogue; it is a sequence of service decisions made in real time. The pressure of daily service is part of the material. “It's a daily challenge, something tremendously stimulating and motivating.” In Miguel’s terms, the work is where knowledge, instinct and hospitality are tested together, table by table.
In Their Words “Yes, I have complete freedom. The selection of wines for the menu is based, on one hand, on my personal tastes and wines that particularly excite me. On the other hand, on emphasizing wines that work in harmony with DiverXO's cuisine.” Freedom in beverage selection carries a duty to the table. Miguel’s statement sets personal conviction beside harmony with the cuisine: wines chosen because they matter to the sommelier, then tested against the pacing, dishes and guest experience they are meant to serve. “At DiverXO, everything happens very quickly during service. That requires great planning for the dynamics of service and anticipating many options in advance, always leaving room for creativity and improvisation.” Fast service rewards planning that does not become rigid. The sommelier’s craft sits between structure and adjustment: the list prepared, alternatives anticipated, the room read in motion, and space left for improvisation when the table requires it.
