i. Biography
A pastry professional with a devotion to quality ingredients and exacting technique, Mindy Segal built her reputation on baking that lands with discipline and directness: fresh from the oven, set at the table, and finished with attention to detail.
Coming Up
At Kendall College, the technical base of Mindy Segal’s work was established before she moved through some of Chicago’s most closely watched kitchens. Charlie Trotter's, Ambria, Marché, and MK in Chicago gave her a run of rooms where precision was expected and standards stayed high. That range added to her technique, but the throughline remained the same: craftsmanship, patience, and close attention to ingredient quality. In 2005, Mindy Segal became owner and pastry chef at Mindy’s HotChocolate in Chicago (Bucktown), a move that defined a key chapter in her career and fixed her place in the city’s pastry scene. The name fit the work: desserts that held comfort and polish in the same frame, familiar in structure but exact in execution. From there, her role in Chicago’s culinary landscape was clear—less about sweets as an end point than pastry as a distinct point of view. Since 2022, Mindy is baker and owner of Mindy’s Bakery. The role keeps faith with the same priorities that shaped her earlier work: careful sourcing, meticulous technique, and the discipline of serving baked goods at their best, while they are still fresh from the oven.
Signature
