    i. Biography

    The Climb

    Training at The Culinary Institute of America in 1987 and Florida International University in 1991 gave Monique Barbeau the formal structure behind a cooking style already taking shape. In 1987, she was named executive chef at the Sheraton Hotel in Seattle, then later served as executive chef at Fuller's in Seattle. Those positions mark a progression in responsibility, but they also point to a deeper commitment: working the Northwest as both setting and subject, with Seattle and the broader region informing what she cooks and how she frames it.

    Today

    Regional ingredient use is the center of the work. Monique Barbeau has said she incorporates ingredients from the Northwest, including seafood, apples, and hazelnuts, and that focus shows up in dishes built around clarity and balance rather than ornament. Tequila-cured gravlax with dill pancakes, Halibut with Grilled Vegetable Ratatouille, Herb-crusted Prawns with Warm Mushroom and Potato Salad, and Fricassee of Seafood all stay close to that approach: local product, careful contrast, and a measured hand. Her own description — “I like to cook with the freshest ingredients available...
