i. Biography
The throughline is precision. In stations, in chef de cuisine responsibility, in opening leadership, Dugan’s cooking has been shaped by control and repeatability, but the plates tied to him also keep a directness that avoids stiffness.
The Path
Training at Culinary Institute of America set the framework for a career built through progressive responsibility. Nick Dugan moved from Bourbon Steak (MINA Group) in Washington, DC, where he was sous chef from 2011, to RN74 (MINA Group) in Seattle as Head Chef, then to Bellecour in Minnesota as Opening Head Chef from 2017, a role that requires more than line work: setting standards, establishing pace, and building a kitchen from the ground up. Later executive-chef posts at Michael Mina Restaurant at Bellagio in Las Vegas and Bardot Brasserie at Aria in Las Vegas placed him in dining rooms where consistency has to hold even when the room is asking for more. Today, Nick is executive chef of Sorelle (since 2022) and executive chef of The Crossing (since 2026), continuing a career defined by movement, adaptation, and range.
The Work Today
At The Crossing in Charleston, the cooking turns toward coastal Mediterranean references. The menu pulls from fresh-caught fish, citrus, olive oil, fresh herbs, and live-fire cooking, with each ingredient used for function as much as flavor: fish for structure, citrus for lift, herbs for clarity, olive oil for roundness, fire for depth. Of the harbor setting, Dugan has said, "The restaurant has an incredible view of the Charleston Harbor, so it was important to us that we incorporate the water in every element." He has also described its idea this way: "The Crossing reflects that movement and sense of connection, and the way our menu brings Mediterranean influences together with local ingredients."
