On Bruny Island, Tasmania, raw-dairy work carries a specific place in Australian production. C2, made by Nick Haddow, is the first Raw Milk Cheese made in Australia and the first Raw Milk Cheese to win an international award. The Ascent
Kitchen work in Eden Valley, South Australia, gave the craft its first discipline: produce, seasonality, repetition, and handwork.
