i. Biography
Nick Valenti left Italy as a young boy when his family emigrated to the United States in the 1950s, and the arc that followed was built less on speed than on disciplined advancement through hospitality’s hardest tiers. By 2024, he was Chief Executive Officer of Simple Hospitality, a role that sat at the point where restaurant concepts, operations and large-scale venue service have to hold together under pressure.
The Path
Management training in 1968 at Restaurant Associates gave Valenti a start inside a company where each step carried more responsibility for standards, staff and service. From there, he moved into the role of manager of John Peel at Restaurant Associates, a position that signaled an early reputation for exacting stewardship. In 1994, he became president and Chief Executive Officer at Restaurant Associates, and he held that post through 2006. The length of that tenure points to a form of leadership built on continuity, operational control and the ability to keep an organization aligned as expectations changed. In 2006, he moved to Patina Restaurant Group, where he served as Chief Executive Officer from 2006–2019. That period extended a career defined by both systems thinking and concept development. Since 2019, Nick has been external advisor of Delaware North, carrying a long institutional memory into a role shaped by broad operational context and executive judgment.
The Work Today
In 2024, he became Chief Executive Officer of Simple Hospitality, adding another layer to a career often centered where fine dining meets large public events. The distinctive part of that work lies in placement as much as in cuisine: he has been involved in creating groundbreaking new restaurant concepts, and in bringing fine dining to sports venues such as the U.S. Open, the Olympics and Grand Slam golf events.
