i. Biography
Nicolai Tram is a chef at Knystaforsen in Rydöbruk, Halland County, Sweden, where he and his wife Eva Tram transformed a former sawmill into a restaurant and guest-house project. Coverage from 2022–2026 consistently describes Knystaforsen as their restaurant in the woods by the Nissan River, and it has been recognized with a Michelin star and a Michelin Green Star. He has also been described as a former Copenhagen-based chef who left city life to build the Knystaforsen project in Sweden.
