Before Ezia in Montlivault, France, the path for Nicolas Aubry was already set by one thing made plain at school and another learned at home: structure at Ferrandi-Paris, and a family table where cooking was normal, not professionalized. The work starts there. In Aubry’s case, the discipline of formal training met a household in which food mattered as a shared practice, and that combination points to a cook who moved early from habit to method. Speed of entry mattered just as much as training. Aubry describes studies as a pause he was willing to shorten, not extend: “I saw studies as a way to wait before really getting started in working life.
