i. Biography

Nikki Tran is a Vietnamese-American chef and restaurant owner associated with Kậu Ba Quán in Ho Chi Minh City and Kậu Ba Kitchen/Kau Ba in Houston. A Saigon native, she opened Kậu Ba Quán in 2013 without formal culinary training and later expanded to Houston with Kau Ba Kitchen in Montrose in 2018. Her cooking is known for Vietnamese-Cajun fusion, using fresh ingredients and avoiding MSG.
