Nikolai Grigorov is the Executive Chef at Jean-Georges Shanghai, where he transforms classic French dishes with bold Asian-inflected seasonings and unexpected flavor combinations using fresh vegetable juices and herbal infusions. He previously served as chef de cuisine at the same restaurant, succeeding Paul Eschbach. The restaurant, located on the Bund since 2004, holds a Michelin star under his leadership.
