Nishida Kazumine

Kazumine Nishida is the Head Chef of Shoukouwa in Singapore, where he has led the kitchen since October 2019 after starting there as a sous chef. He is a Kansai-born Japanese sushi chef with more than 20 years of experience, known for Edomae-style omakase, seasonality, and precise knife work at the two-Michelin-starred restaurant.
