i. Biography
Olia Hercules is a Ukrainian-born London-based chef, food writer, and cookbook author who was born in Kakhovka, southern Ukraine, and trained at Leiths School of Food and Wine before working as chef de partie in restaurants including Ottolenghi. Her debut cookbook, Mamushka, won the Fortnum & Mason Award for Best Debut Cookbook, and she later published Kaukasis, Summer Kitchens, and Home Food. In 2022 she co-founded Cook for Ukraine, a fundraising initiative that has raised over £2 million for Ukraine.
