The Work

Behind It At Château Cambon la Pelouse, the craft note is precise: winemaking for a Bordeaux Haut-Médoc producer in Macau. The estate produces wines from Merlot, Cabernet Sauvignon, Cabernet Franc, and Petit Verdot grown on fine and larger Quaternary gravel soils. The vineyard work there is described through *culture raisonnée*, with hand-harvesting, pruning, leaf thinning, green harvesting, and destemming used to ensure grape quality. Those details matter because they show the practical base of Pascaud’s work: not only cellar decisions, but the sequence of vineyard actions that shape fruit before fermentation begins. From 2004 to 2021, he served as Technical Director at the estate. The Road Training came first in Angoulême, France, where Pascaud studied at Campus agro-viticole L'Oisellerie Angoulême from 1995 to 1997. There he earned a BTSA in viticulture and oenology, placing both the vineyard and the cellar at the start of his formal education. He later attended Bordeaux Sciences Agro from 2002 to 2004. That period brought the Mastère Spécialisé Manager de Domaines Viticoles, a credential directly aligned with estate management and wine-domain leadership. The professional arc then moved through Château Cambon la Pelouse, into Treasury Wine Estates, and onward to his 2023 Penfolds France title. Taken together, the path is unusually coherent: viticulture and oenology training, specialist education in wine-domain management, technical direction in Macau, Médoc sourcing, and a present role that combines sourcing with winemaking.
