    Coming Up

Bar technique in this line was built through service rooms with different demands: Milk & Honey in London sharpened Orlando Marzo’s early precision, before Eau-de-Vie in Melbourne, Dinner by Heston in Melbourne, and Lûmé in South Melbourne extended that practice across Australian bar programs. Since 2021, ownership has entered the same working sequence through Loro, where Marzo is founder.

    Where They Are Now

The career progression keeps the trade roles legible: bartender, head bartender, bar manager, beverage director, founder. In Marzo’s case, the later title does not erase the bar-floor discipline behind it. Founding work at Loro remains tied to service, not only to the structure of a business or drinks program. The current role sits beside the service lineage that formed the practice.

    Signature

Signature cocktails include Loro olive martini.
