Pablo Mateus is a chef, coffee roaster and the founder of FANKØR in Quito. Inspired by Scandinavian specialty-coffee culture, he established the café in 2018 and built its program around light-roasted Ecuadorian coffees, in-house bread, pastry, chocolate and cooking.
