Bianchini’s path began not with the measured stillness of the cellar alone, but with years spent inside the daily rhythm of the estate itself. Early in his career, he worked as winery staff at Ciacci Piccolomini d’Aragona in Montalcino, Tuscany, Italy (1985–1990), an experience that would have given him an intimate understanding of the property from the ground up: the cadence of harvest days, the practical demands of the winery, and the long view required by serious wine. From there, his professional life took an unexpected turn into speed and endurance when he became a professional cyclist at Colnago team (from 1990). The shift suggests a discipline forged in two demanding worlds—one measured by vintages, the other by training, stamina, and movement—before bringing him back, in a different capacity, to the estate that first shaped him. Today, Paolo is co-owner and winemaker of Ciacci Piccolomini d’Aragona.

Today, Bianchini works as co-owner and winemaker at Ciacci Piccolomini d’Aragona, where his role places him at the center of the estate’s continuing story. The work carries the weight of stewardship as well as craft: tending to a historic property in Montalcino while shaping wines that speak in a voice both personal and place-driven. Among those wines, Riserva Santa Caterina d'Oro carries special meaning. Of it, he has said, "With my sister we decided to dedicate this wine to our father." The line gives the wine a deeply familial resonance, linking the bottle not only to vineyard and cellar, but to memory, gratitude, and the quiet act of dedication that can infuse a wine with emotional depth as much as technical care.
