Paul Ivić is an Austrian chef of Tyrolean origin with Croatian heritage who has been the head chef and CEO of TIAN Restaurant Wien since its opening in December 2011. He pioneered vegetarian fine dining in Vienna, earning a Michelin star that has been maintained, along with 17 points from Gault Millau and three Gault Millau toques. His culinary philosophy centers on sustainability, biodynamic agriculture, and zero-waste cooking using whole crops from root to leaf, with a commitment to sourcing organic ingredients directly from farmers.
