Pauline Vauthier trained at Lycée agricole de Montagne, where she completed a BTS Viticulture Oenology. That education gave her a rigorous foundation, but it also seems to have set the rhythm for the work that followed: patient observation, technical discipline, and a close relationship with the vineyard and cellar alike. Her path was shaped there, grounding her work in the craft and discipline of wine.

Today

At Château Moulin Saint-Georges, Pauline Vauthier frames the wine through approachability and structure, two qualities that can easily be spoken about in the abstract but are far harder to achieve with precision. Her description of the style is revealing for its confidence and its lack of ornament. “I love this wine as it has an easy approach,” she has said, describing “crisp, accessible Merlots with nice red fruits, without complexities and meant to be drunk when young, but can also age for 10 years without problems.” The result is a style that feels open and inviting at first glance, yet still holds its line, with enough shape and reserve to carry it through time. That balance—between immediate pleasure and quiet longevity—sits at the center of her work.
