i. Biography
Pedro Beltrán de la Torre is the head chef at Casa Antonio in Jaén, Spain, where he has led the kitchen since July 2017 and is credited with steering the restaurant’s modern Andalusian, seasonal, and creative cooking style. He is a Jienense chef who returned to Jaén after training in top Spanish kitchens, including work alongside chefs such as Josean Martínez Alija, Martín Berasategui, Francis Paniego, Koldo Rodero, Quique Dacosta, and Eneko Atxa.
