Pedro Chavarría

Pedro Chavarría is a Chilean chef behind DeMo and DeMo Magnolia in Santiago. He founded DeMo in Barrio Franklin in 2021 and later opened DeMo Magnolia inside Hotel Magnolia in central Santiago in October/November 2024; DeMo Magnolia was listed at No. 31 on Latin America’s 50 Best Restaurants 2025 and Chavarría received a new knife at The Best Chef Awards 2025. His cooking is modern and creative, centered on local ingredients and on telling the story of Santiago’s historic markets and neighborhoods through tasting menus.
