i. Biography
Pedro Miguel Schiaffino is a Peruvian chef based in Lima who built his reputation on Amazonian cuisine and sustainable sourcing, especially through Malabar and ámaZ. He studied at the Culinary Institute of America and the Italian Culinary Institute for Foreigners, and has been described as a founder of Despensa Amazonica, an initiative focused on Amazonian biodiversity and gastronomy. In 2019, he received the American Express Icon Award from Latin America’s 50 Best Restaurants for his work championing the Amazon through his restaurants and projects.
