Peter Baur works as the winemaker at Baur Weine in Rafz, where the job is defined as much by proximity to customers as by work in the cellar.
The Essentials In 1988, while training as an oenologist, Baur started his own wine production. From there, Pinot Noir became the centre of his work, and the grape remains the clearest marker of his approach. His view of cultivation is stated without ornament: “These grape varieties mean, for us, the right step toward an ecological future. We see this as a contribution to cultivation that is as close to nature as possible.” That position points to a practical philosophy of vineyard work: close to the site, attentive to cultivation, and oriented toward the long term rather than short-term effect.
