i. Biography
Peter Brunel is an Executive Chef with Lungarno Collection in Florence, Italy, and the work reads as a study in control, structure, and measured expression. When he says, “Cuisine design begins with science, study and research,” the line describes a method rather than a pose: observe closely, test carefully, and keep refining until an idea holds on the plate. In Brunel’s kitchen, composition is not decoration. It is where technique becomes texture, aroma, temperature, and color.
The Path
The path through Brunel’s kitchens shows how technique is built by repetition, relocation, and the demands of different rooms. Peter worked as cook / trainee in haute cuisine at Parkhotel Laurin in Bolzano, where precision had to be learned early and carried cleanly. He then worked as chef at Villa Negri in Riva del Garda (from 2003), followed by chef at Chiesa in Trento, with each position adding another register to a practical vocabulary shaped by care and attention. The move into coordination at Palagio59 in Riganano sull’Arno, Tuscany, widened the scope of the work beyond the stove. After that came Executive Chef at Lungarno Collection (2014–2019), a role that asked for both oversight and creative discipline. Since 2019, Peter has been chef of Peter Brunel Ristorante Gourmet, where the name on the door makes authorship part of the brief and places the cooking squarely under his own direction.
The Work Today
His cuisine operates like a working lab, with ideas, research, and travel feeding one another before the plate is finalized. The useful part of that description is its discipline: the cooking suggests testing, comparison, and adjustment, not improvisation for its own sake. Even so, the result is shaped to carry feeling as well as method, with courses arranged to move in sequence and reveal themselves step by step. As he has said, “Now that I’ve reached the milestone of fifty, I’ve chosen to tell one story in particular—my own—through a tasting journey that reflects who I am.” That statement places the tasting journey at the center of the current work, as a format for organizing memory, temperament, and experience into a coherent menu. It is a tale woven from tradition and passion, infused with creativity, and always looking toward the future. Read plainly, the line points to the balance Brunel keeps working toward: inherited form on one side, and the push to extend it on the other.
Signature
Peter's signature dishes include Chef’s Circus. The name points to pacing, control, and a sense of staged movement, which fits a kitchen language built around arrangement as much as flavor.
In Their Words “My cuisine is a laboratory where ideas, research, and travel converge, giving life to creations that tell stories.” “It is a tale woven from tradition and passion, infused with creativity, and always looking toward the future.”
