The foundation of Patajac’s cooking is Regional Karst cuisine based on local, seasonal ingredients. Among the dishes singled out, the porcini soufflé with sautéed forest mushrooms was described by Gault&Millau as a true masterpiece, a dish that brings forest depth into a polished form. The plates move through game, pastry, preserved intensity and local meat. A juicy young venison fillet is served with roasted potatoes, sun-dried tomatoes and fennel seared with cheese; rabbit sausages also appear among the dishes found on the plates at Ruj.
