Peter Reinhart’s work sits in the overlap between bakery floor and classroom: ministry outreach led into teaching, teaching led into kitchens, and Johnson & Wales University became the long-running home for both faculty work and chef-on-assignment duties. The Path
Training at Charter Oak State College (CT) underpinned a teaching career that later became central to Reinhart’s practice. The classroom came first in a formal sense at California Culinary Academy in San Francisco (1994–1999), where full-time instruction meant translating technique into something students could use in real service and production. That role placed Reinhart where good baking often lives: in the gap between doing the work and explaining why it works. A faculty role at the Providence campus at Johnson & Wales University in Providence, Rhode Island (1999–2003) extended that same exchange between kitchen and classroom. The work then moved into a different register with the founding of Brother Juniper's Bakery in Santa Rosa, California, where the daily cycle of mixing, proofing, shaping, and baking became its own form of thinking. The bakery made the craft immediate again: less theory, more rhythm. Later roles as creative consultant at Pie Town in Charlotte, North Carolina (from 2009), and as creative consultant at Pure Pizza in Charlotte, North Carolina, kept Reinhart close to bread and pizza while shifting the work toward development and direction. Today, he is chef on assignment of Johnson & Wales University (since 2003), host of pizzaquest.com (since 2010), consulting product developer of The California Culinary Development Group, and member, Chefs Council of The Center for Culinary Development.
