Peter Sanchez-Iglesias is a British chef currently overseeing Gwen in Machynlleth, Wales, where the kitchen is described as an intimate tasting-menu operation serving eight guests. He is best known for building Bristol’s Casamia and Paco Tapas into Michelin-starred restaurants, and later opening London’s Decimo at The Standard hotel.
