The Climb
Service training at Scuola Alberghiera a Torino led Piero Sattanino into the dining room as a first-class waiter at Michelangelo in 1966, where the work was built on precision, timing, and command of the floor. By 1973, that path had carried him into co-ownership at Tastevin in Torino, moving the craft from service into responsibility for the room.
Today
Ownership now sits with Piero Sattanino at Hotel Parigi in Bordighera and Ristorante La Reserve in Bordighera, while his role as Vice President of ASPI (Italian Professional Sommelier Association) places him within the professional frame that organizes the trade. His own line keeps the register light and direct: “faccio un cin cin in amicizia e con tanta salute cin cin e buona degustazione!”
