    Service training at Scuola Alberghiera a Torino led Piero Sattanino into the dining room as a first-class waiter at Michelangelo in 1966, where the work was built on precision, timing, and command of the floor. By 1973, that path had carried him into co-ownership at Tastevin in Torino, moving the craft from service into responsibility for the room.
