i. Biography
Burgundian cellar work is taught by repetition: tasting, watching élevage, reading parcels, and learning how a vintage moves through barrel. Pierre-Vincent Girardin received that formation early in the family cellar, in the orbit of his father, Vincent Girardin, where the practical knowledge of Burgundy was passed through daily work rather than declaration.
Coming Up
A new domaine in Burgundy still has to answer to older measures: site, restraint, and the handling of élevage. Domaine Pierre Girardin, founded by Pierre-Vincent Girardin in 2017, works from inheritance without treating inheritance as a script. The register is contemporary but disciplined: clarity, precision, freshness, and a Burgundian preference for detail over volume. In this region, persuasion comes through nuance. Girardin's work at Domaine Pierre Girardin is built around line, texture, balance, and the expression of place. The wines are not framed to speak loudly; they are built for close reading, with the parcel and vintage kept in view.
Current Practice
The current work centers on wines that express terroir, using controlled yields and low-intervention vinification and ageing to bring out the best in each site. The practical aim is to let origin remain legible, with enough cellar guidance to keep shape and precision. Farming and cellar decisions are handled with environmental attention rather than certification language. Pierre-Vincent Girardin uses organic products that respect the environment, though the domaine is not certified organic. Bottling follows the lunar calendar and atmospheric pressure, placing timing and observation into the final step before release. The élevage is defined and consistent: the wines age in 456-liter oak barrels for 12 months, then in vats for 7 months, with around 50% new barrels. That sequence gives structure while keeping fruit, mineral tension, and texture in balance. The resulting style associated with Girardin's work is precision, freshness, and elegance, with classic textures, vibrant acidity, and refined power. Domaine Pierre Girardin functions as both a personal signature and a Burgundian position: inherited cellar knowledge applied with contemporary restraint, in service of wines that carry place with poise rather than force.
