Puligny-Montrachet Les Referts and Les Petits Charrons are the named signature wines tied to Ente’s work here, and their names carry the Burgundian habit of letting place do the first speaking.

A quiet cellar, little theatre

The cellar at Domaine Arnaud Ente reads as a working room before it reads as a stage. The vessels do not ask for attention. Stainless steel sits beside demi-muids, and the useful drama belongs to what has already happened outside: fruit cut at the chosen moment, yields held down, parcels kept apart, clay and limestone carried forward without excess dressing.

For a cave tasting, that austerity matters. The room does not soften the wines with spectacle, and the domaine’s small scale leaves little distance between vineyard decision and finished bottle. Burgundy often rewards this kind of restraint; here, restraint is not an aesthetic applied at the end, but a consequence of production size, cellar choices, and a producer who has stayed with the same work since 1992.
