Lees gather at the bottom of the barrel before any title matters, and Raphaël Coche, winemaker at Domaine Coche-Dury in Meursault, works from that cellar fact outward. His route has stayed inside the family estate: full-time work from 1999 to 2010, then winemaker and estate lead since 2010. The education is the long way, vineyard pressure first, then cellar timing, then the small correction that makes a parcel clearer rather than louder.

At this domaine, continuity is not treated as theatre. The frame is viticulture, oenology, parcel reading, and repetition in Meursault, with Chardonnay as the central material and the wider Côte de Beaune as the working field. Coche’s task is to hold nerve in the wines without making freshness feel imposed. That means treating each parcel as its own unit of meaning, not as raw material for a house effect. The discipline sits in the accumulated decisions that a family estate asks for season after season.

Meursault through lees and wood

The cellar work is built around long, traditional vinifications and extended lees contact. Lees time has a practical role here: it helps prevent oxidation while preserving the freshness of the grapes. The method asks the cellar to serve the fruit condition in front of it, not to cover it. In the white wines, the result sought is not general polish, but a line of Burgundy Chardonnay in which origin remains legible.

New wood enters with the same restraint. A good proportion is used to extend cellar-aging potential and to give fruit a clean slate, not to push barrel flavor to the front. The domaine works on a small scale, with 9 hectares and 3500 cases annually, and that scale suits a practice where neighboring sites can refuse to behave alike. Meursault Les Rougeots and Meursault Les Chevalières sit as adjacent village lieux-dits; Rougeots is richer and rounder, Chevalières leaner and more citrus. Corton-Charlemagne, the estate’s sole white Grand Cru, extends that parcel logic into another register.

The village estate and its quiet cellar

The place keeps a discreet register: a village estate in Meursault, surrounded by limestone-rich vineyard hills, with the work directed toward precision rather than display. The cellar, the vineyard, and the tasting room read as parts of the same discipline. Chardonnay, Pinot Noir, and Aligoté belong to the range, but the still white wines carry the clearest public outline of the domaine’s method.

In the room, the point is not noise or ceremony. Barrel tasting and single-vineyard tasting make sense here because the differences are the subject: a rounder Rougeots beside a more citrus Chevalières, freshness held through lees, wood used for structure rather than seasoning. The parcel is the domaine Corton-Charlemagne.
