Training at Ananda The Himalayas gave Rahul Rana a foundation in discipline and exactitude. That early setting helped establish the controlled pace and measured detail that now shape his work. In 2016, he moved to Trèsind in Dubai as Executive Pastry Chef, where the demands of an international kitchen sharpened the technical control that still sits under his cooking. Since 2022, Rahul Rana has served as Executive Chef of Avatāra Restaurant, where the kitchen is steered through restraint rather than excess. The approach is rooted in tradition, but not fixed to it; the work favors clarity, precision and a contemporary reading of Indian cuisine.
Where They Are Now
At Avatāra Restaurant, Rahul Rana’s cooking places farming, vegetation and seasonality at the center of the plate. The focus is on humble seasonal ingredients, fresh local produce and dairy, handled with attentiveness rather than force. As he puts it, “vegetarian food today is not about limitations but possibilities.”
