i. Biography
Raphaël Thomas is the owner and operator of Domaine Paul Thomas in Chavignol, Sancerre, where he runs the family estate with Claire and manages the winery. After his father died at the end of the 2000 harvest, he returned to Chavignol to continue the domain’s work and oversee vinification and production. The estate is organic and vegan, with vineyards in Sancerre and wines centered on Sauvignon Blanc and Pinot Noir.
